How to make Coconut Burfi

We love coconut burfi. It’s something we like to make every year for Diwali.

The Recipe – How to make Coconut Burfi

Ingredients

  • 3 teaspoon ghee (clarified butter)
  • 1 cup ricotta cheese
  • 1 cup desiccated coconut (add 3/4 in a blender to pulverize into thick particles, keep some long shreds of coconut intact)
  • 1/4 cup unsweetened coconut
  • 1 Tablespoon milk powder
  • 1/2 teaspoon cardamom powder 
  • Optional: silver vark, sprinkle 2 raw sliced pistachios/or almonds 

Directions

  • Line a dish with parchment paper
  • In a pan crumble ricotta cheese and mix well with the coconut.
  • Add ghee to a heavy bottomed pan (or wok) put on low heat.
  • Add the cheese and coconut mixture and mix well. 
  • Keep stirring so it doesn’t stick to the bottom.
  • Add and mix in the condensed milk.
  • Keep stirring for 5-6 minutes.
  • Add cardamom powder and mix.
  • Add milk powder and mix.
  • Keep stirring, cook for 2-3 minutes.
  • The mixture will turn into a thick mass and will begin to leave the sides of the pan.
  • Transfer to the pan with parchment paper. Spread it 1/2 inch thick.
  • Let it cool down.
  • If you wish you can add the silver vark  and nuts to decorate
