This is one of our favorite street foods from North India. During the Monsoon season you see vendors with carts loaded with corn on the cob, a charcoal grill (open gas stove), cut limes and masala selling this delicious treat on the side streets.
The Recipe
Time to make: 10 Minutes
Ingredients
- 4-6 yellow corn on the cob
- 1 lemon or lime cut into four (seeds removed)
- 1 Tsp Chaat masala (or mixed amchur and black salt)
- 11/2 Tsp salt
Instructions
- Remove the husks from the corn
- Place 3 on one burner of a gas grill and roast (repeat on another burner with three corns on the cobs)
- Move the corn every 30 seconds to get it evenly charred. All the kernels will pop and blacken in varying degrees.
- Mix all the spices in a bowl. Using your fingers rub the spice mixture on the corn and squeeze the lemon all over.
- Put on a platter and serve hot. You may choose to use a knife to cut each one in half.
