How to make Masala Corn on the Cob


This is one of our favorite street foods from North India.  During the Monsoon season you see vendors with carts loaded with corn on the cob, a charcoal grill (open gas stove), cut limes and masala selling this delicious treat on the side streets.

The Recipe

Time to make: 10 Minutes

Ingredients

  • 4-6 yellow corn on the cob
  • 1 lemon or lime cut into four (seeds removed)
  • 1 Tsp Chaat masala (or mixed amchur and black salt)
  • 11/2 Tsp salt

Instructions

  • Remove the husks from the corn
  • Place 3 on one burner of a gas grill and roast (repeat on another burner with three corns on the cobs)
  • Move the corn every 30 seconds to get it evenly charred. All the kernels will pop and blacken in varying degrees.
  • Mix all the spices in a bowl.  Using your fingers rub the spice mixture on the corn and squeeze the lemon all over.
  • Put on a platter and serve hot.  You may choose to use a knife to cut each one in half.
