How to make kale or spinach pakora (fritter)


The Recipe

Crispy, spiced fritters made with chickpea flour.

Needed Utensils:

  1. Mixing bowl
  2. Deep frying pan or kadai
  3. Slotted spoon
  4. Paper towels

Ingredients:

  1. 1 cup of kale (chopped)
  2. 1 cup besan (gram flour)
  3. 1–2 tbsp rice flour (for extra crispiness, optional)
  4. 1/2 tsp turmeric powder
  5. 1/2 tsp red chili powder
  6. 1 tsp cumin seeds
  7. Salt to taste
  8. Water (as needed)
  9. Oil (for deep frying)

Cooking Method:

  1. In a mixing bowl, combine besan, rice flour, turmeric, red chili powder, cumin seeds, and salt.
  2. Add chopped kale to the mixture.
  3. Gradually add water and mix to form a thick batter (not too runny).
  4. Heat oil in a deep-frying pan over medium heat.
  5. Drop small portions of batter into the hot oil.
  6. Fry until golden brown and crispy, turning occasionally.
  7. Remove with a slotted spoon and place on paper towels to drain excess oil.
  8. Serve hot with mint chutney or ketchup.
